An indulgent pairing of
horse meat tartare from Kumamoto,
sourced from horses born and raised in Japan,
and Oscietra caviar from Lombardy, Italy.

The delicate sweetness of turnip,
the subtle salinity of caviar,
and the rich umami of the tartare
come together in every bite.

While many horses are imported
and then raised in Japan for their meat,
those born and raised entirely in Japan
remain a true rarity.
