久しぶりに作った手打ちの詰め物パスタ「トルテッリ」。
中に詰めたのはさつまいも×ブッラータ×パンチェッタ。
さつまいものねっとりした甘さに、ブッラータのミルキーなコク、そこにパンチェッタのじゅわっとした塩気が加わる
まさに“あまじょっぱい”の最高峰パスタです。

玉ねぎの旨味と青ネギの香りを乗せたバターソースでリッチでありながらクドくならない味わいに仕上げています。

ペアリングはシェリーのオロロソ。
ナッツやドライフルーツの香りがとてつもなくマッチします。

This time, we’ve filled them with sweet potato, burrata, and pancetta.

The luscious sweetness of sweet potato meets the milky richness of burrata, with pancetta adding a juicy, savory touch.
Sweet and salty at their finest.

Served in a butter sauce with the savory depth of onion and the fresh aroma of green onion, they’re rich without feeling heavy.

Our pairing: Oloroso sherry.
Its nutty aromas and notes of dried fruit are an incredible match.
